Introduction
My personal favorite brownie recipe. VEGAN and with the added deliciousness of both pecans and walnuts! The whole-wheat flour and zero sugar count also makes them a guiltless treat. Ingredients
-
1/2 cup vegan margarine (Smart Balance Light with flax)
1/4 cup Hershey's Special Dark Cocoa Powder**dark is the only way to go in this recipe!!
2 Ener-g Egg Replacer eggs, prepared (1 tbsp egg replacer + 4 tbsp hot water, whisked to frothiness)
1 to 1 1/2 cups Stevia In The Raw (measures cup for cup like sugar)
1/4 cup unbleached white flour
1/2 cup white whole wheat flour
1/8 tsp salt
1/4 cup unsweetened almond (or other nondairy) milk
2 tbsp chopped pecans
2 tbsp chopped walnuts
Tips
Directions
Preheat oven to 350F and spray an 8x8 brownie pan with canola oil baking spray.
In a small saucepan, over medium hest, melt margarine and cocoa, stirring constantly to make sure it doesn't burn. Keep stirring until it becomes creamy.
Remove from heat and set aside.
In a medium bowl combine the PREPARED egg replacer (make sure to whisk!!) with stevia. Add flour and salt and stir. Add chocolate mixture, milk, and stir again until a batter is formed.
Mix in the nut pieces. Pour into prepared pan and bake for 25-30 minutes or until a toothpick inserted into the middle comes out clean (brownies will pull away from the side of the pan as a sign of doneness).
Let cool before cutting into 16 squares.
Serving Size: makes 16 decadent desserts
