Down Home Souther Style Brown Rice with Tomatoes

Introduction

I grew up on white rice with my favorite dish being the Georgia style rice and tomatoes. This is the way I have adapted it to diet requirement (with the exception of using canned stewed tomatoes instead of fresh seeded and peeled stewed. Number of Servings: 10

Ingredients

    3 cups water (bring it to a rolling boil before putting rice in)

    1- 1/4 cup long grain brown rice

    1-3/4 tsp Chef Paul Prudhommes Magic Salt Free Seasoning- All Purpose Blend

    2 Tbsp Smart Balance low sodium buttery spread

    2 (14.5 oz cans stewed tomatoes (with bell pepper, onion, & celery)





Tips

The number of servings varies with size I limit myself to 1/2 cup family uses 1 full cup


Directions

Bring water to boil. Add rice and seasoning. Reduce heat to a medium simmer covered ( be careful the pot does not boil over). Once rice is tender add tomatoes and buttery spread. Enjoy
