1 Chicken Breast Cubed
1 Red Bell Pepper Chopped
1 Green Bell Pepper Chopped
3 Large Tomatoes chopped with seeds
1/2 cup water
2 TB Olive Oil
2 Cups of Cooked Rice
3 tsp Taco Seasoning
Salt and pepper to taste
In a medium pot, heat up 1 TB of oil and sautee onion until soft. Add the peppers and sautee 5 more minutes. Add the tomatoes and water and let simmer for 20 minutes or until it becomes a thick sauce. Stir occasionally. Season to taste (this is known as Satarash and can be used as a side dish or sauce for any meal. Today we will use it as a part of a Mexican dish)
In a wok, heat up remaining oil and add chicken breast. Season with taco seasoning. Once chicken is thoroughly cooked, add the above sauce and simmer for 2-3 minutes.
Add the chicken mixture to 2 cups of cooked rice and stir well.
