Jane's My Fridge Salad

Introduction

The ingredients listed are always in my fridge (thus the name) I can not eat most leaf vegetables without risk so I seldomly use them. Ingredients


    1 large tomato, peeled seeded and chunked

    I medium Kirby cucumber; peeled, seeded, diced

    1/2 medium onion, peeled and diced

    1/4 sweet raw pepper, membrane and seed removed, diced ((any color will do)( I use cubanella peppers ))

    1/4 stalk celery, (de-stringed if possible) chopped

    1 Tbsp balsamic vinegar

    1 Tbsp cilantro, finely choppped


Tips

This salad is intended mainly for me to maintain calorie count but it is basic enoough that others may find it helpful. I once thought all the goodies had to be included in my food. Now I know that life and health are far more important.


Directions

wash and prep all vegetables. mix together in medium bowl. Add vinegar and top with cilantro ( I use the small red Ninja chopper and just pulse it once I have cut the veggies into chunks (approx 1" size) suitable to avoid stressing the machine. For prep of most vegetables once peeled and seeded

Serving Size: 2 salads approximately 1 cup each
