Joanie's Sloppy Joes (Manwich copy)

Introduction

I wanted to copy the taste of Manwich without the HFCS, thickeners and reconstituted ingredients. This is only accidentally vegetarian; meat lovers will probably never know the difference (my husband didn't!)

I didn't want to go as far as making my own tomato sauce (ain't nobody got time fo dat!) so I did use canned sauce; using an organic ketchup removed the HFCS.

I used the can of beans for variety's sake but you could just double the TVP.

Ingredients

    1 onion, chopped fine (a little more than a cup)
    1 red bell pepper, chopped fine
    1 large rib celery, chopped very fine (optional)
    2 large carrots, fine dice
    1 clove garlic, minced
    1-1/2 Tbsp olive oil
    1 15-oz can tomato sauce
    1 cup organic ketchup (I used Trader Joe's)
    1 can kidney beans
    1 12-oz package TVP (like Morningstar farms grillers recipe crumbles)
    1 Tbsp chili powder
    1/2 tsp mustard powder (or a squirt of yellow mustard)
    1/4 tsp cayenne pepper
    Several grinds of black pepper
    NO more salt -- the ketchup adds enough!


Tips

This REALLY tastes like Manwich and is pretty sweet. If you prefer your joes less sweet, you could cut the ketchup by half and add some tomato paste. But don't eliminate the ketchup entirely; sloppy joes need the sweetness and complex flavors (clove, allspice etc.) from the ketchup.

Definitely wait to add the TVP and the beans -- if added too soon, they can get mushy. And don't let the final mixture cook too long for the same reason.

If you have a little black coffee hanging around from breakfast, dump it in -- it adds another layer of flavor!


Directions

-Heat the oil in a large kettle or high-sided skillet.
-Sauté the onions, bell peppers, carrots and celery over medium-high heat until the onions are translucent.
-Add the garlic and sauté another minute or so.
-Add the tomato sauce, ketchup and seasonings, reduce heat to medium and cook about 15 minutes until the carrots are cooked. You may need to add a little water if it gets too thick.
-Stir in the TVP and beans, and cook another 10 minutes or so until heated through and the flavors have melded a bit.
-Serve on whole wheat hamburger buns (each serving is enough for a large pile on each half of one bun.)

Serving Size: Makes 4 generous servings, about 1-1/2 cups each
