Chocolate coconut bark

Introduction

Low carb candy! Low carb candy!
Number of Servings: 16

Ingredients

    2 oz (55 grams) dark sugar free chocolate, like Simply Lite Brand

    3/4 cup unrefined coconut oil
    1/2 cup slivered almonds
    1/2 cup raw unsweetened coconut
    1/2 tsp sea salt

    Using a double boiler, melt chocolate. Take of heat and mix in coconut oil. If oil is solid, leave on double boiler and mix it in until melted. Stir in coconut and almonds. Pour onto an 8x 8 pan lined with parchment or non stick foil. Spread out to edges and sprinkle with sea salt. Put in freezer for 15 minutes or until solid. Cut into 16 squares.

Tips

Original recipe called for 1 cup coconut oil, but it was a bit too "coconutty" for me. Try it if you like. For more intense chocolate flavor, up the chocolate by another square or 2.
