1 lb extra lean ground beef
24 won ton wrappers (3.5inch)
1 can black beans, drained and rinsed (low sodium)
taco seasoning of your choice
1 cup shreded colby jack cheese
1/2 cup your favorite sals
Spray a 12 muffin tin with non-stick spray. Line the bottom of each muffin hole with a won-ton wrapper. Top with beef mixture, a bit of salsa, and cheese. Add another won-ton wrapper and repeat the layer.
Bake at 425 for 5 to 10 minutes or until the cheese is melted and the edges of the won-ton wrappers turn golden.
