1 1/2 cups black beans, canned, drained and rinsed
1/4 cup corn, frozen, thawed
1/2 cup sweet bell pepper, sliced small
1/3 cup onion, sliced small
1 jalapeno pepper, roughly chopped
1/3 cup whole wheat panko bread crumbs
1/4 cup egg substitute or 1 egg
1/2 tsp. cumin
To cut the pepper, onion and jalapeno, I placed them in my mini food processor and pulsed it a few times until the vegetables were small.
Form into 4 patties, approx 4 oz each. I got four 4oz patties and one 3oz patty.
Place patties on a piece of parchment paper and refrigerate for at least 30 minutes or place in the freezer for a later use.
To Grill - Spray a pice of aluminium foil with cooking spray and place on grill over medium heat. Cook each side of the burger for about 6 minutes.
To fry: Place about 2 tsp. of olive oil in a pan over medium heat and cook each side of the burger for 4 - 6 minutes.
