Mexican Green Chile Casserole w/ Veggies

Introduction

Ingredients

    1 12.5oz can Swanson Premium Chunck Chicken, 8 oz drained
    1cup Kitchen Basic Unsalted chicken Stock
    1 10.75oz Campbell's Cream of Mushroom Soup (condensed)
    4.5 oz can Old El Paso Chopped Green Chile
    1 15 oz Mixed Vegetables (Canned), 1.75 cup drained
    1 med Raw White Onion
    1 cup Kraft Mexican Style 4 Cheese Blend (2% Milk)
    12 Tortillia (White Corn) MISSION
    1 t Cumin
    Pepper to Taste

Tips

I spray tortillas with cooking spray and toast in oven while mixing soup mixture.5-10 min. They hold up better when cutting cassarole. Light Sour Cream on top adds calories, fat and flavor.


Directions

Mix soup, stock, chiles, vegetables and Cumin in a large saucepan, stirring with a whisk. Bring to a boil, stirring constantly. Remove from heat. Spread 1/2c soup mixture in a 11 x 8-inch baking dish coated with cooking spray. Arrange 4 tortillas over the soup mixture break 2 to fit over holes, and top with 1/3 soup, 1/3 cheese. Repeat layers, ending with the cheese. Bake at 350░ for 30 minutes or until bubbly.
