Turkey Meatballs

Introduction

Number of Servings: 10

Ingredients

    2 lbs Lean ground turkey
    1 C Italian bread crumbs
    1/2 C Skim Milk
    2 eggs
    2 medium carrots, grated
    1 stalk celery, chopped
    1 medium onion, chopped fine
    1 clove garlic, chopped
    3 T parsley, chopped
    1 T paprika
    1 tsp nutmeg
    1/2 C all purpose flour
    3 T olive oil

Directions

In olive oil sweat onions and garlic. In a bowl combine all ingredients save flour and oil. Add onion and garlic. Mix. Roll into meatballs and roll meatballs in flour to coat. Heat skillet and brown meatballs. Finish cooking in sauce.

Serving Size: Makes 10 servings. 3 meatballs per serving
