Comfy Chicken Casserole

Introduction

This casserole brings memories of my Grandmotherís chicken pot pie to mind. Except, I do not make dough very well and do not have the patience she had in the kitchen. I love to make it when it is stormy outside or I feel lonesome. This casserole brings memories of my Grandmotherís chicken pot pie to mind. Number of Servings: 12

Ingredients

    *Healthy Request Cream of Mushroom Soup, 1.25 cup
    Fat free half and half, 1 cup
    *Tyson boneless, skinless chicken breast, 16 oz, cubed
    *Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.), diced
    Peas, frozen, 1.25 cup
    *Progresso Bread Crumbs - Italian Style, 2 cup
    Colby Cheese, 1 cup, shredded
    seasonings to taste: I usually use:
    seasoned salt
    garlic powder
    onion powder
    paprika
    sage
    oregano
    thyme
    and a tiny bit of allspice.

Tips

You can raise the temp of the oven based on your particular oven, mine cooks quickly and a higher temp leaves me with partially raw meat and hard potatoes, and overly brown cheese.


Directions

preheat oven to 325 degrees
cube chicken, place it in large mixing bowl, dice potatoes, thaw peas in microwave and add them to bowl
season mixture, mix seasoning in thoroughly
add half and half and soup, mix thoroughly.

lightly spray the bottom of large pyrex dish with butter flavored cooking spray.

sprinkle bread crumbs on bottom of dish until it is covered, then evenly spread mixture onto bread crumbs, evenly cover mixture with the remainder of bread crumbs and top with cheese.

Bake in oven for 2 hours or until meat is cook completely.

Let stand for about 5 mins and serve.

Serving Size: makes 12 1 cup servings.
