Introduction

Hearty and satisfying! Great for brunch. This casserole is prepared the night before, so all you have to do in the morning is pop it in the oven, and poof! Brunch is served. You could also really improve the nutritional values of this by using "healthy" alternatives, - low sodium soup, turkey sausage, etc... Hearty and satisfying! Great for brunch. Ingredients

    3 large eggs
    2 cups shredded cheddar cheese
    1 can of cream of mushroom soup
    2 cups 2% milk
    2 cups seasoned croutons
    1lb bulk pork sausage
    1 package real bacon bits
    1.5 cups cubed lean ham

Tips

I had brunch at a friends house today, and this was what was on the menu. Probably not the most "diet friendly" casserole, but it comes in at 293 calories per serving, and it was VERY FILLING, not to mention delicious! I was also surprised at the nutritional values. I guess all in all, for an occasional treat, it's really not that bad!


Directions

Line the bottom of a 13x9 pan with the croutons, then layer the cooked sausage,ham, and bacon bits. Blend eggs, soup, and milk. Pour over the top of the meat and croutons. Cover and refrigerate overnight or 8 hours. In the morning, preheat oven to 375 and bake for 1 hour. Remove from oven and cover the top of the casserole with the shredded cheese. Return to oven until cheese has browned - about 10 minutes. Remove from oven and allow to cool for 10 minutes before slicing into 12 squares.
