Introduction

Number of Servings: 7

Ingredients

    1 lb. boneless, skinless chicken breast, diced
    1 cup diced onions
    3 cloves garlic, sliced
    1 chayote squash
    6 grape tomatoes
    1/4 Tbsp capers
    1 small can sliced black olives
    2 Tbsp. olive oil, divided
    1 tsp. saffron
    1 tsp. ground coriander seed
    2 Tbsp. lemon juice

Directions

Cook chayote, onion, and garlic in 1 Tbsp of the olive oil. About 2 minutes. Add saffron and coriander and cook 2 minutes. Add tomato and cook 3 more minutes. Transfer veggies to a dish. Add remaining 1 Tbsp. of olive oil and cook chicken until browned. About 5 minutes. Add veggies back to skillet, along with olives, parsley, and lemon juice. Cover and cook about 7 more minutes, or until chayote is desired tenderness.

Serving Size: Makes 7 servings, about 1 cup each.
