Quick & Healthy Mexican Rice

Introduction

This is sooo easy and flavorful! Great side to any Mexican main dish. This is sooo easy and flavorful! Great side to any Mexican main dish.
Number of Servings: 8

Ingredients

    2 Cups Minute Premium Rice (uncooked)
    1 14.5 oz. can 99% Fat Free Chicken Broth
    1/2 Medium yellow onion, chopped
    1 tsp. dried oregano
    1/2 tsp. dried ground cumin
    Juice of 1/2 medium lime
    1 14.5 oz. can diced tomatoes with green chilis
    3 green onions, sliced thinly
    1/2 Cup fresh cilantro leaves

Directions

In medium saucepan, bring broth, yellow onion, oregano, cumin and lime juice to a boil. Simmer for 5 minutes. Remove from heat and add rice and tomatoes; stir. Cover and let stand 5 minutes or until liquid is absorbed. Add green onion and cilantro, stir well, and serve. Makes 8 servings about 3/4 cup each.
