Introduction

This strange pudding has a fluffy, marshmallow-like texture. From "Spirit of the Harvest: North American Indian Cooking", for my family's logging purpose. Number of Servings: 8

Ingredients

    3 c cranberry juice
    1/2 c maple syrup
    1/2 c cream of wheat, uncooked

Tips

Original recipe called for pudding to be topped with cranberry-maple sauce.


Directions

Boil cranberry juice & maple syrup. Add cream of wheat gradually (to prevent lumps), stir constantly over low heat for 10 minutes. Transfer to bowl. Beat for 10 minutes with a mixer. Pudding will turn light in color and become gooey-fluffy.
