Jane's Sweet Pea Salad

Introduction

Number of Servings: 4

Ingredients

    1 15 oz can peas drained and rinsed

    2 hard boiled egg whites, chopped

    1/4 cup celery, strings removed and finely chopped

    1/2 medium red sweet pepper, chopped

    1/4 cup chopped onion

    1 tsp crushed Italian Seasoning

    1 tsp Chef Paul Prudhommes Magic Salt Free all purpose seasoning

    1 Tbsp olive oil
    3 Tbsp red wine vinegar

    3 cups Romaine broken into small bite sized pieces

    4 lemon wedges celery, pepper and onions

Tips

There are many variations to this salad ...traditionally it would have mayo and whole diced boiled eggs as well as salt and pepper...that is up to the individual taste


Directions

place washed, drained peas ion medium bowl. add chopped egg whites and chopped celery, pepper and onions . Add seasonings, Vinegar, and oil. Toss together. Refrigerate 1 hr before serving and toss again just before serving. Divide lettuce into four bowls. top lettuce with pea mixture and lemon wedge. (any remaining lemon may be squeezed over salad as an option if desired.)

Serving Size: 4 servings about 1 cup each
