Baked oatmeal

Introduction

Number of Servings: 6

Ingredients

    1 cup old fashioned oats
    1/4 cup chopped nuts
    1 tsp baking powder
    1 tsp cinnamon
    Mix dry ingredients

    1 cup skim milk
    1 tsp vanilla extract
    1/4 cup egg substitute
    1/4 cup honey
    Mix wet ingredients

    1 banana sliced
    1 cup frozen berries

Directions

Pre-heat oven to 375 degrees
Spray bottom of 2 qt. baking dish with cooking spray
Arrange sliced bananas on the bottom of the pan
Pour half of the berries and chopped nuts on top of the bananas
Cover with mixed dry ingredients
Pour mixed wet ingredients over dry
Top with remaining berries and nuts
Bake in 375 degree oven until top is browned and oats are set. Remove from oven and allow to set for 5 minutes before serving.
