1/2 Cup Yellow Cornmeal
1/2 Cup Whole Wheat Flour
4 Tbsp Granulated Sugar
2 tsp Baking Powder
1/4 tsp Salt
1 Egg, Large
1/2 Cup Milk 1%
2 Tbsp Canola Oil
1/2 Cup Frozen Corn
For easy servings, bake in cupcake tins! Enjoy.
1. Mix together first 5 ingredients thoroughly. Make a well in the center.
2. Add next 3 ingredients to well, Mix.
3. Incorporate corn into batter.
4. Choose your cooking method. You can microwave on high for 5 minutes or until toothpick inserted to center comes out clean or You can bake at 375° for 10 minutes at a time until toothpick inserted into center comes out clean.
