Ingredients

    4 c chicken broth
    4 c diced potatoes
    2 med onion
    2 T olive oil
    3 cloves garlic
    .5 t pepper, black

Directions

peel and dice potatoes. cook in chicken broth. Cook onion in olive oil in non stick skillet until soft and slightly caramelized. When potatoes are soft mash and add onion and pepper.
