Bran Muffins ( Good Housekeeping 1980)

Introduction

Favorite Bran muffins.. you can add any berry or raisin and it doesn't hurt the calorie count, but if you add 1/4 chocolate chips, you will add 40 calories more per muffin. Ingredients

    1 1/2 cups Whole Bran Cereal (All-Bran)
    1 cup buttermilk
    1 beaten egg
    1/4 cup cooking oil
    1 cup flour
    1/3 cup brown sugar (packed)
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup blue berries or fresh Cranberries, raisins
    (or 1/4 cup mini Chocolate chips)

Tips

I have used raisins, fresh cranberries, fresh or frozen blueberries and I have also used mini chocolate chips. Just enough chocolate chips to excite the kids and fool them into eating a bran muffin!


Directions

Combine Bran and buttermilk; let stand 3 minutes or till liquid is absorbed. Stir in egg and oil. Set aside. combine all dry ingredients with a whisk. Add to bran mixture, stirring just til moistened. Batter will be thick. Fold in chips, or berries, or raisins. Fill prepared muffin tins 2/3 full. Bake in 400 oven for 17-20 minutes.

Serving Size: makes 12 large muffins
