Quinoa Salad

Introduction

Delicious and simple salad packed with fiber and protien. Delicious and simple salad packed with fiber and protien.
Number of Servings: 6

Ingredients

    3 cups water
    1.5 cups Quinoa
    .25 cups raisins
    .25 cups blanched slivered almonds
    2 green onions
    2 tablespoons lemon juice
    1 tablespoon olive oil
    2 tsp garlic powder
    1 tsp onion powder
    dash cayanne powder
    additionl salt and pepper to taste

Directions

Bring water salt and pepper to a boil. Add quinoa and raisins to boiling water and cook until all water absorbs. while quinoa is cooking mix the remaining ingredients and set aside. When the quinoa is cooked add it to the lemon juice mixture and combine thoroughly. Refridgerate until thoroughly chilled.

Serving Size: makes 6 half cup servings
