White Bean Chili with Winter Vegetables

Ingredients

1 tbsp olive oil
2 large carrots
2 parsnips
4 cloves garlic
2 leeks, white and pale green parts
1 small can diced green chiles
1.5 tbsp ground ancho chiles
1 tsp cumin
.5 tsp oregano
2 tsp kosher salt
2 15 oz cans cannellini beans, drained and rinsed
1/4 cup chopped cilantro
1 avocado
Tips
Directions
Cut leeks, carrots and parsnips in 1/2" pieces
Heat olive oil
Add leeks, stir for 1 minute
Add garlic, stir for 1 minute
Add 2 tbsp water, stir for 2 minutes
Add chiles and spices
Stir in carrots and parsnips
Add 5 cups water
Simmer for 30 minutes
Top with cilantro and diced avocado
Serving Size: Makes 4 1.5 cup servings
