Beet Mango Feta Salad

Ingredients

    500 gr boiled beets
    100 gr cucumber - diced with peel
    1 medium red onion
    1 Mango - diced
    100 gr Feta light - crumbled
    3 tbsn Cider vinegar


Tips

Instead of fresh beet - you can substitue with marinated beets and omit the vinegar. Good both ways!


Directions

Boil, peel and cool beets. Dice beets- add to salad bowl.
Finely chop onion. (Tip: for tender taste -saute for 3-4 min in a skillet - no oil cooking spray). Chill and add to beets.
Dice the mango and cucumbrt; crumble the feta - Add to the mix.

Add cider vinegar and mix well.

In a pan, warm up oil and saute onion and chard. Add to salad.

Mix it all and chill before serving.


Serving Size: 10 side dish serving of 100gr each
