10 oz. can Chicken broth
1 Cup Quinoa
1/8 cup green olives (or Kalamat)
1/8 cup pesto sauce
1/4 cup shredded mozzerella
Meanwhile, mix cheese, olives and pesto in a mixing bowl. When Quinoa is done add it to the mix. Scoop out with approx. 1/4 cup into lightly sprayed cupcake tins. Cook for approx. 20 min.
