Oatmeal Walnut Muffins

Introduction

Instant, Quick, and Regular Oats Cereal, 1 cup, cooked
Buttermilk, lowfat, 1 cup
Brown Sugar, 1 cup, unpacked
Butter, salted, .5 cup
Egg, fresh, 1 large
Salt, .5 tsp
*Flour, white, 1 cup
Baking Soda, .5 tsp
Instant, Quick, and Regular Oats Cereal, 1 cup, cooked
Buttermilk, lowfat, 1 cup
Brown Sugar, 1 cup, unpacked
Butter, salted, .5 cup
Egg, fresh, 1 large
Salt, .5 tsp
*Flour, white, 1 cup
Baking Soda, .5 tsp

Number of Servings: 12

Ingredients

    In a bowl : soak for 1/2 hr
    1. cup oatmeal 1 c. buttermilk
    Set aside.

    In another bowl:first three ingredents-mix well. Add the dry items together and add to this mixture, mixing well.
    1 Lg.egg 1 c. flour
    1/2 c. brown sugar 1/2 tsp. salt
    1/2 c. butter 1/2 tsp. baking soda
    1/2 tsp. baking powder
    Now Add: oatmeal mixutre to this this flour/br. sugar mixure. Mixing well.
    Add 1 c. chopped nuts (optional).
    scoup 1/4 c. into greased/sprayed muffin pans.
    Bake at 350* for 20 mintues makes 1dozen
    Cool some before removing from pan, or they will fall apart.

Tips

You can add 1/4 c. chocolate chips, OR 1/2 c blueberries If you double this for Texas style pans, bake 3-5 extra minutes -depending on your oven temp.
Also rember to add extra egg if adding berries or chips or ? . These will fall apart if you take them from the pan too soon.


Directions

Bake at 350* for 20 minutes
IF you double this for Texas style muffins add three + minutes for bigger size pan

Serving Size: makes 1 dozen muffins
