Exotec's Quickie Cream of Potato soup
Submitted by: EXOTECIntroduction
Cream of potato soup made with mashed potato mix. Cream of potato soup made with mashed potato mix.Number of Servings: 10
Ingredients
-
1 pkg Idahoan Buttery Selects mashed potato mix
3 cups milk (I used Lactaid)
2 T butter
1 tsp bouillon paste (your choice of flavor; I used turkey)
1 tsp onion powder
1/4 tsp freshly cracked peppercorns
2 slices cooked bacon, crumbled
scant 1/3 cup shredded cheese (I used Colby-Jack mix)
Tips
Today's soup ended up being about 4 1/2 cups. This is because I "eyeballed" the milk after the first 3 cups. The serving sizes are for this volume; nutrition data may be affected.
Directions
Heat milk over moderate heat until just steaming or barely simmering. Stir frequently and watch to be sure it doesn't burn.
Pour in dry potato mix and stir well.
Add seasonings and crumbled bacon and heat through, stirring frequently.
Add shredded cheese and reduce heat, warming through just enough to melt cheese.
Serve with cheese shreds or chive/green onion garnish on top.
