Introduction

A rough recipe for my enchiladas. Ingredients change depending on what's on sale, what's in season, etc. Could be made vegetarian by omitting the ground turkey. A rough recipe for my enchiladas. Directions

Heat oven to 350 degrees. Poor one cup of salsa on the bottom of a casserole, and spread to cover evenly.

Chop onion, bell peppers, jalapeno peppers and cook in large pan. Add ground turkey and chopped fresh cilantro.

Once meat is no longer pink, roll individual enchiladas with cooked filling, and place upside-down in casserole. Add each next enchilada until done. Poor remaining salsa on top, and top with shredded cheese if you like. It will add to the calorie count if you use cheese.

Bake for 20 minutes, or until tortillas are brown and cheese is melted.

Serving Size: makes eight individual enchiladas

Number of Servings: 8
