Ground Turkey Enchiladas

Ingredients

2 cups Salsa, your preference for spice
1 lb. Ground Turkey
8 multi-grain or whole-wheat flour tortillas
1 can black beans, drained and rinsed
2 bell peppers, color choices are up to you
1 onion
Jalapeno peppers, again, your preference
Cilantro, to taste
*Shredded cheese, optional
Tips
Serve with fresh avocado or guacamole or greek yogurt.
Directions
Heat oven to 350 degrees. Poor one cup of salsa on the bottom of a casserole, and spread to cover evenly.
Chop onion, bell peppers, jalapeno peppers and cook in large pan. Add ground turkey and chopped fresh cilantro.
Once meat is no longer pink, roll individual enchiladas with cooked filling, and place upside-down in casserole. Add each next enchilada until done. Poor remaining salsa on top, and top with shredded cheese if you like. It will add to the calorie count if you use cheese.
Bake for 20 minutes, or until tortillas are brown and cheese is melted.
