Apricot Glazed Chicken Breasts

Ingredients

    1 lbs boneless, skinless chicken breast halves
    1/4 tsp paprika
    1 tsp canola oil
    2 cloves garlic
    1/3 cup reduced calorie apricot jam
    1/4 cup orange juice
    1 tsp minced fresh cilantro
    1/4 tsp ground nutmeg
    1/4 tsp ground allspice

Directions

Rinse the chicken and pat dry with paper towels. Sprinkle the chicken with paprika.

Spray an unheated, large no-stick spray. Heat the skillet over medium high heat. Add the chicken and cook for 4-6 minutes. Turn the chicken over and cook for 4-6 minutes more or until no longer pink. Transfer to a plate.

Add oil to skillet. Add the garlic. Cook for 30 seconds while stirring. Stir in the preserves, orange juice, cilantro, nutmeg and allspice. Bring to a gentle boil. Remove from heat and pour over the chicken.
