Ingredients

    1/2 cup butter, softened
    1/2 cup sugar
    1 whole egg
    2 egg whites
    1 tsp vanilla extract
    2 tsp grated lemon rind
    2 1/4 cups flour
    1 1/2 tsp baking soda
    1/2 tsp salt
    1 cup non-fat plain yogurt
    1 Tbsp fresh lemon juice

Directions

1. Preheat the oven to 375F.

2. In a large bowl, cream together the butter and sugar. Add the egg, egg whites, lemon rind, and vanilla, and beat until blended.

3. Sift together the flour, baking soda, and salt in a separate bowl. Add the flour mixture and the yogurt alternately to the sugar mixture, mixing after each addition, and beginning and ending with the flour.Stir in the lemon juice.

3. Coat a tube pan with cooking spray. Spoon the batter evenly into the pan.

4. Bake the cake for 35-40 minutes, or until a toothpick inserted into the cake comes out clean. Cool in the pan for 5 minutes, then turn out onto a wire rack to cool completely.
