Veggie meatloaf with beef

Introduction

This is super awesome for kids - getting them to eat veggies and they don't even know it. I think this is my kids favorite meal! This is super awesome for kids - getting them to eat veggies and they don't even know it. I think this is my kids favorite meal!
Number of Servings: 8

Ingredients

    1 Can Tomato soup
    1 cup grated carrots
    1/2 cup beets, roasted and pureed
    1/2 cup celery, grated
    1/2 cup (or 1/2 a whole) green pepper diced
    1 sleeve whole grain saltenes (all bran is great too)
    1 T Worcestershire sauce
    mix with a pound of ground beef

    form into a "log" into a cassarole dish leaving about an inch of space from the sides. Spoon 1/2 can of tomato soup over the top of the loaf.

Tips

I have added eggs in the past but they are not required. The more grated veggies the better!


Directions

bake at 350 degrees covered for about an hour, then remove the lid and bake for an additional half hour or until the tomato soup is "candied". you can add the additional 1/2 can of tomato soup if you would like at this stage.

Serving Size: makes 8 1"pieces
