Introduction

Number of Servings: 5

Ingredients

    1 pkg Soba Noodles - 10.5 oz (1 package if using Hakubaku)
    Smoked Salmon (lox) cut into strips - 7 oz
    1 Lebanese Cucumber cut into pieces
    2 Spring Onions (aka scallions / green onions) chopped
    1 cup Cilantro leaves, fresh
    1 lime, cut in slices.

    Sauce:
    3 tbsp Lime Juice
    1 tbsp Soy Sauce
    2 tbsp Caster (super fine) sugar (or just sugar or honey)
    1 tbsp Sesame Oil
    1 tbsp Ginger Root, finely shredded

Tips

You can purchase smoked salmon ready-to-eat in packaged meat isle of most grocers.
Spring onions are also known as green onions or scallions.
Caster sugar just means super fine sugar - it's optional.


Directions

Cook soba noodles, drain. Prepare/ chop other ingredients. Combine all in bowl.

In a separate bowl, combine all ingredients for sauce, then combine with main ingredients and mix well. Serve with lime slices as garnish (for extra lime juice for those who like it!) and enjoy!

Refrigerate leftovers in airtight container.

Serving Size: Makes 5 Servings - about 1.5 cups per serving
