banana oat cookies

Number of Servings: 43

Ingredients

    1 1/2 cups flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/2 tsp kosher salt
    1-2 ripe bananas
    1 large egg or 1/4 cup egg substitute
    2 tbsp canola oil
    3/4 cup brown sugar
    1/4 cup granulated sugar
    1/4 cup baby food sweet potatoes or applesauce
    2 tsp vanilla extract
    1 3/4 old-fashioned oats
    3/4 cup dried cranberries
    1/2 cup pecan pieces

Directions

whisk dry ingredients together. Mix wet ingredients together and slowly add wet to dry. Mix until combined and place rounded tbsp full dough on parchment lined baking sheet about 2 " apart. Bake at 350 for 12 minutes; rotate tray about 1/2 way through cooking time.

Serving Size: Makes 43 smaller or 38 larger cookies
