Introduction

This is sooo good on a cold, wet, rainy, ANY day! This is sooo good on a cold, wet, rainy, ANY day!
Number of Servings: 8

Ingredients

    Cugino's Chicken Enchilada Soup Mix, 8 serving
    Chicken Breast (cooked), no skin, 8 ounces
    *Hunt's Tomato Sauce, no salt added, 2 cup
    Water, tap, 7 cup (8 fl oz)

Tips

I add drained whole kernel corn, drained/rinsed black beans, etc for variety.


Directions

Cut chicken breast into bite sized pieces. Cook until lightly browned.
Bring water to boil, add tomato sauce, soup mix and cooked chicken. Simmer for 25 to 35 minutes.
Serve with tortilla chips crushed on top, shredded cheese, chopped green onions as desired.

Serving Size: Makes about 8 to 10 1 cup servings.
