Chickpea and Cauliflower Curry

Introduction

Number of Servings: 6

Ingredients

    1 tsp olive oil
    1_1/2 cups sliced cauliflower florets
    1 small zucchini, diced
    1 small red onion, chopped
    2 cloves garlic, finely chopped
    2 teaspoons curry powder
    1/2 cup fat free low sodium chicken broth, vegetable broth or warer
    1/2 tsp salt (sea salt)
    1 pinch cayenne pepper
    1 cup drained and rinsed canned chickpeas
    1/4 cup golden raisins
    1/3 cup minced fresh parsley

Directions

Heat oil in a large skillet over medium-high heat. Add cauliflower, zucchini, onions and garlic. Saute until just tender, about 5 minutes. Sprinkle with curry powder and cook, stirring for 30 seconds. Add broth, salt, cayenne pepper, chickpeas, and raisins. Cook until heated through, about 2 minutes. Stir in parsley just before serving.

Serving Size: makes 6 servings, approximately 2/3rds cup each
