1 Medium Spaghetti Squash
1 Small Sweet Onion, minced
1/4t Red Pepper Flakes
1t thyme (or parsley flakes)
Dash of Garlic Powder
1/2c Sour Cream
1/2c Shredded Cheddar
Salt and Pepper to taste
Place in covered dish with 1/4" of water.
Microwave for 10-12 minutes.
In a medium size skillet over medium heat, add butter, onions, rep pepper, garlic and parsley.
Cook until onion slighlt brown in color.
Salt and Pepper to taste.
Using a fork, scrape the insides of the squash and transfer to a small bowl.
Add in the onions and sour cream.
Add half the cheese and mix well.
Transfer to a greased baking dish and top with remaining cheese.
Bake 375 for 15-20 minutess until golden on top.
