Introduction

Ingredients

    1/2 lb. chicken (cooked or raw), finely cut
    2-2 1/2 C water
    2 medium carrots, chopped
    3 celery stalks, chopped
    1 green pepper, chopped
    1/2 medium onion, chopped
    1 t salt
    1 T curry powder
    1/8 t pepper
    1 C tomato sauce
    1/3 C milk
    2 T cornstarch

Tips

I usually serve this curry over spaghetti squash. It is a great substitution and makes this recipe very healthy and filling!


Directions

Brown chicken in a small amount of fat. Add water. Add vegetables, and seasonings. Blend together tomato sauce, milk and cornstarch and add to chicken and veggies. Simmer 45 minutes or until vegetables are tender and sauce is thick and glossy. Stir frequently.

Serve over rice, noodles or biscuits.
