Mango Pie for One

Ingredients

    1 serving oven-ready lasagna noodles
    1 c ginger tea (made from 1 herbal tea bag, 1 t ginger, or 1 t fresh grated ginger, steeped for 30 min. in 1 c water - if necessary, strain; cool completely)
    1 c mango, cubed
    1 T cornstarch
    sweetener to taste

Directions

Spray your bowl, tart, or soufflé dish lightly with oil. Lay the noodles in the bottom, cutting them to make them fit, barely overlapping edges - the idea is to have some to fold over top of pie.

Put the mango cubes in a separate bowl with the cold tea. Stir in the cornstarch until completely dissolved. Microwave for 40 seconds, stir. If it needs more time to thicken, just remember that it will thicken a bit more without additional cooking time. Stir well to be sure it´s the consistency of pie filling.

Pour the filling into the "crust" and turn the edges over the filling. Microwave with a plate turned upside down over the top just enough to warm the noodles.

Sprinkle with a little powdered sweetener and spices, if you want. Try doing this with any fruit, or a mixture of fruits. You can also vary the flavor of herbal tea. If you need fewer calories, share and put a smile on someone else´s face!
