Smoked Fish Sauté

Introduction

An easy meal when your fish is not smoked - but you wish it was. An easy meal when your fish is not smoked - but you wish it was.
Number of Servings: 2

Ingredients

    Bacon, 8 medium slices
    Garlic, 6 cloves (remove)
    1 Orange Bell Pepper
    1 large Onions
    1 Tbsp Olive Oil
    1 1/2 pounds fresh Cod
    1 Tbsp smoked paprika
    1 Tbsp black pepper

Tips

Don't mix vigorously, as Cod will fall apart. Paprika *must* be smoked paprika, not standard paprika.


Directions

Cook 8 bacon strips over medium heat in a non-stick frying pan.

While bacon is cooking, chop garlic, bell pepper, and onion.

Remove bacon from pan when about half done; leave drippings in pan, and sautée chopped vegetables. Add olive oil if necessary to provide enough fat. While veggies are cooking, chop cod and bacon into 2 inch pieces.

After 5 minutes, add cod and bacon, smoked paprika, and black pepper. Mix and cover. Cook 15 minutes more, mixing once.

Serving Size: Makes two large, or 4 small dinner servings
