Pumpkin Bread with Chocolate Chips

Number of Servings: 32


    Pumpkin, cooked, 1.5 cup, mashed
    All-purpose white flour, 1 cup
    Whole Wheat Flour, 1.25 cup
    Flaxseed flour, 1.25 cup
    4 eggs
    Baking Soda, 2 tsp
    Cinnamon, ground, 2 tsp
    Nutmeg, ground, 1 tsp
    Cloves, ground, 1 tbsp
    Ginger, ground, 1 tsp
    Granulated Sugar, 1 cup
    Splenda, 1 cup
    semi-sweet or dark chocolate chips, 12 oz bag
    Light Sour Cream, 1 cup


You can use all white flour, you will need 3.5 cups.


Mix all ingredients together except the chocolate chips. Once ingredients are mixed well, then add the chips and mix together. Divide the mixture into 2 loaf pans. Bake at 350 degrees for 60-70 minutes.

Serving Size: Makes 2 loaves, each loaf makes 16 slices
