Mushroom Onion Soup

Ingredients

    2 cups (8oz) fresh mushrooms
    2 large onions
    1 tablespoon butter
    2 tablespoons light margarine
    2 tablespoons all-purpose flour
    3 cans Swanson (6cups) chicken broth
    1/4 teaspoon black pepper
    1/2 cup uncooked long-grain brown rice
    2 tablespoons chopped fresh chives

Directions

Either buy the pre-cleaned and sliced mushrooms or clean and slice them yourself. Any variety will work. Clean and slice the onions. In a large saucepan, melt the butter and margarine; add mushrooms and onions. Cook and stir over low heat for about 7 minutes. Blend in the flour then add the broth and pepper. Cook, stirring constantly, until the mixture boils. Reduce heat then add the rice. Cover and simmer for about 35 minutes or until the rice is tender. Sprinkle with chives. This makes 10 approximately 1-cup servings.
