Orzo and Sausage Skillet

Ingredients

    1 tbsp Olive Oil
    1 large Bell pepper, sliced
    1 large Tomato, chopped
    2 Links Italian sausage, casings removed
    1/2 cup Artichoke hearts
    1 tbsp pesto
    1 tsp garlic paste
    1 1/2 cup chicken broth
    1 1/2 cup water
    170 g dry orzo

Tips

Season with red pepper flakes for extra spice.
Can include any other ingredients with this - works great with shrimp and spinach as well!
Top with shredded cheese.


Directions

Combine water and chicken broth in pot and bring to a boil. Add dry orzo, cook until pasta is al dante. Drain, reserve 1/2 cup of liquid.

While pasta is cooking, heat oil in large skillet. Add bell peppers and cook for 5 minutes. Add turkey sausage and cook until brown. Add garlic and pesto and combine. Cook for 1 minute or until garlic is fragrant. Add tomato and artichokes. Heat through.

Add cooked pasta to sausage/pepper mixture and combine. If too dry, add some of the reserved pasta liquid. Serve hot.
