Introduction

Number of Servings: 4

Ingredients

    1 tbsp Olive Oil
    1 1/2 cup chicken broth
    1 1/2 cup water
    1 cup dry orzo
    1 large Bell pepper, sliced
    1 1/2 cup fresh mushroom, cut to preferred size
    1 medium onion, diced
    1 cup cooked spinach
    3 cloves garlic, minced
    1 14 oz can diced tomato with celery, onion & green pepper, drained
    4 patties, Marc Angelo Mild Italian Turkey Burgers
    1 cup shredded cheese, divided.

Tips

Season with red pepper flakes for extra spice.
Can include any other ingredients with this - works great with shrimp as well!


Directions

Combine water and chicken broth in pot and bring to a boil. Add dry orzo, cook until pasta is al dante. Drain, reserve 1/2 cup of liquid.

While pasta is cooking, heat oil in large skillet. Add bell peppers, onions, and garlic and cook for 5 minutes. Add canned tomatoes and mushrooms, stir and heat for 2 minutes. Add turkey burgers, breaking up meat into bite size or smaller pieces, cook until brown. Add cooked spinach, stir to combine. Heat through.

Add cooked orzo to turkey mixture and combine. If too dry, add some of the reserved pasta liquid. Serve hot, sprinkle 1/4 cup shredded cheese on each serving.


Serving Size: Makes 2-3 servings
