Lemon Marinated Shrimp

Number of Servings: 4

Ingredients

    1 lb shrimp, deviened and peeled
    1/2 cup lemon juice
    4 Tbsp canola oil, divided
    2 cloves (1 Tbsp) garlic

Directions

Mix 2 Tbsp oil and remaining ingredients in a zipper bag. Marinade for 15 mins or up to 1 hour. No longer than 2 hours or the lemon juice will begin to cook the shrimp.
Remove shrimp from marinade and drain slightly. Cook in a skillet with remaining oil. Stir fry until done, in batches if necessary.
