Lynne's Shepards Pie (sans the potato)

Introduction

This is a lower carb version that I tried for my husband. Still a really good, filling meal. This is a lower carb version that I tried for my husband. Still a really good, filling meal.
Number of Servings: 8

Ingredients

    2.5 lbs lean ground beef
    6-8 carrots cut up
    1 cup of frozen corn
    1 cup chicken broth
    2 tblsp flour
    1 lg onion sauteed
    2 tblsp garlic

Directions

cook ground beef in skillet until done..tranfer to lg bowl (do not wash or rinse pan), add boiled carrots and thawed corn to mixture and start to sautee onion and garlic in same pan as ground beef, add to beef mixture(so not wash or rinse pan). Mix flour with chicken broth until no lumps and add this mixture to same pan and bring to boil. Turn heat down and simmer until gets thicker (3-5 min). Add this to beef mixture and transfer to casserole dish. Put in 350 degree oven for 30-45 and serve.
If you like a higher carb version just add mashed potatoes on top before you place in oven, or just serve over rice!
