Introduction

extra rice (white or brown) that is leftover makes a delicious comforting dessert or snack. extra rice (white or brown) that is leftover makes a delicious comforting dessert or snack.
Number of Servings: 8

Ingredients

    2 cups COOKED rice
    2 - 3 cups milk of your choice (I used 2c. soy and 1/2 c. light cream. use skim, whole, cream, soy, almond...)
    1 egg (optional, adds protein and thickness)
    real maple syrup/sugar/sweetener to taste (1/4 cup here)
    dried fruit 1/4 to 1/2 cup, optional
    cinnamon to taste (I used about 1 tsp)
    vanilla to taste (I used about 1 tsp)

Directions

put rice, milk, egg(beaten), and sweetener in pan. add dried fruit and cinnamon. mix well. bring to boil, then simmer 20-40 minutes - until it thickens. turn off heat and stir in vanilla.

Serving Size: 8 servings -- less if you're hungry!
