Curried Coconut Peanut Chicken with Brown Rice

Ingredients

    1 can Light Coconut Milk
    1/4c Soy Sauce
    6T PB2
    1T Curry Powder
    1t Cayenne (optional)
    1lb Boneless, Skinless Chicken Breast, cut into bite sized pieces
    1c Uncooked Brown Rice
    1c Snap Peas

Directions

Prepare rice according to package directions, adding snap peas during the last 5 minutes of cooking. Meanwhile, combine coconut milk, soy sauce, PB2, curry powder, cayenne, and cut up chicken. Stir well and refrigerate for 30 minutes. Transfer chicken mixture to a large pan and cook over medium high heat for 15-20 minutes or until chicken is cooked through and sauce thickens slightly. Serve chicken and sauce over rice with peas.
