Ingredients

1 large zucchini
1/2 cup grated parmesan cheese
1 cup panko bread crumbs
sprinkle of nutmeg
1/4 tsp paprika
1 clove garlic, minced
1 egg
salt and pepper to taste
1-2 tbsp olive oil
Tips
Shred zucchini and let sit covered, wrapped up in paper towels for a few minutes beforehand.
Directions
Shred zucchini; remove water by soaking up water with paper towels. Combine all ingredients, except olive oil. Mix thoroughly. Using a heaping tablespoon, form mixture into 8 (eight) patties. Heat olive oil in pan over medium heat. Once heated, add patties and cook until golden brown. About 3 (three) to 4 (four) minutes per side.
