1 tbs olive oil
1 small onion, diced
1/2 pint grape tomatoes, halved
10 oz baby spinach
1.5 cups chicken broth
3 cloves garlic, pressed
juice of 1 lemon
1/8 cup white wine
3 tbs fresh parsley
crushed red pepper to taste
1 lb peeled shrimp
3 cups spaghetti squash, cooked and removed from shell
2. Add spinach and saute til wilted.
3. Add broth, garlic, lemon juice, wine, parsley, red pepper, oregano and shrimp.
4. Cook, stirring frequently, until shrimp are pink and curled.
5. Serve over spaghetti squash.
