This is a variation of a Turkish soup recipe that I have.
3.5 cups chickpeas (2 cans)
10 tbsp tomato paste (1 small can)
6 cups tomatoes (1/2 super big can, include the juice)
2 cups onion, chopped
2 cups bell peppers, chopped
2 cloves garlic
1 1/2 lbs chicken breast (boneless, skinless)
Spices to your liking:
Red crushed peppers
I bet you can do this in a slow cooker as well, just adjust the cooking time if needed.
our tomato juice from can in deep baking dish and stir in tomato paste and spices. Chop tomatoes, bell peppers, onions, garlic and add. Drain chickpeas and add. Add chicken breasts. Cover dish with lid or foil.
Bake for 3 hours.
