Introduction

Number of Servings: 8

Ingredients

    Main ingredients:
    3 cups black beans (2 cans)
    10 tbsp tomato paste (1 small can)
    6 cups tomatoes (1/2 super big can, include the juice)
    2 cups onion, chopped
    2 cups bell peppers, chopped
    2 cloves garlic
    2 lbs pork tenderloin

    Spices to your liking:
    Red crushed peppers
    Oregano
    Basil
    Thyme
    Rosemary
    Fennel Seed
    Cumin
    Celery

Tips

I bet you can do this in a slow cooker as well, just adjust the cooking time if needed.


Directions

Preheat oven to 300 F.

Pour tomato juice from can in deep baking dish and stir in tomato paste and spices. Chop tomatoes, bell peppers, onions, garlic and add. Drain black beans and add. Chop pork into 1-2 inch chunks and add. Cover dish with lid or foil.

Bake for 3 hours.
