as much garlic as you can stand, minced 3scallions diced
3 medium carrots, diced
2 tbsp olive oil
2 stalks celery, chopped
8 cups 98% fat free chicken broth stock
3 14.5 oz cans diced tomatoes, including juice
1 cup dry lentils
Red pepper flakes or
cayenne pepper (to taste)
1.5 cups ronzoni smart taste elbow noodles
I estimated that this will make about 15 1 cup servings according to the ingredients that I had it may be more or less but pretty close .
In a large soup pot, sauté garlic, and carrots in oil on medium-high heat . Add the celery, stock, tomatoes, lentils,Red pepper flakes or , cayenne and bring to a boil. Reduce heat to low and simmer for 20 minutes or until carrots are tender. Add pasta and simmer to 10 more minutes before serving.
